We built The Delhi Lounge to bring a sliver of that world to Irving — the same warm hospitality, the same reverence for spice, the same insistence that a meal should feel like a homecoming.
Long before European travelers wrote of the subcontinent, Old Delhi's chefs were layering flavor with a precision that felt like architecture. Marination was measured in days. Spices were toasted whole and ground the same morning. Meat was slow-cooked in sealed pots so the steam could not escape. These are the techniques our kitchen still uses today.
